This olive oil Fruité Vert is an extra virgin olive oil from the Haute-Provence, produced by GAEC La Borie. The olive grove, consisting of more than 3,200 trees spread over 8 hectares, enjoys an ideal location in a valley traversed by a small river. The combination of varieties such as Aglandau, Frantoio, and Bouteillan, together with the care and expertise of the Drac family, results in an oil of exceptional quality and character.
The olives are harvested in early November and cold-pressed within a few hours at the Moulin de la Fine, at the foot of the Luberon. This rapid processing guarantees optimal freshness and a lively aromatic profile. The result is a distinctly “fruité vert” olive oil with a fresh, green signature and a beautiful balance between smoothness and intensity.
Taste & use:
On the nose, you discover fresh aromas of artichoke, complemented by notes of pear and red fruit. On the palate, the oil starts soft and round, followed by a pleasant bitterness and light astringency. The finish reveals refined notes of green banana peel. Ideal as a finishing touch over roasted seasonal vegetables, with white fish, or in fresh salads where the oil truly comes into its own.
