Maison Oliveras' Chorizo Extra is an artisanal cured sausage from Salamanca, a region known for its rich tradition of cured meats and Iberian pig farming. This chorizo is a typical product of the Iberian Peninsula and is prized for its strong, spicy, and slightly smoky flavor, and its characteristic deep red color.
The sausage is made from coarsely ground pork and bacon, seasoned with salt, garlic, sweet paprika (pimentón), black pepper, and spices like cumin. This spice mix varies by region, but paprika is the main ingredient that gives it its color and characteristic aroma.
The meat is traditionally processed and stuffed into natural casings. This is followed by a slow drying process, which can take several weeks to months, depending on the size and the environment. During the aging process, a natural mold (a white or green tinge) may develop, which enhances the flavor and improves shelf life.
This variety is a "chorizo doux": mildly spiced, yet full of flavor. Pre-sliced and vacuum-packed in a convenient 70g format – ready for tapas or an aperitif.
