The Heritage Reserve, also known as "Jambon Masia" (homemade ham), comes from pink Landrace pigs raised in Catalonia using traditional methods. This ham undergoes a careful Italian aging process of no less than 24 months, inspired by centuries-old Italian techniques.
The process begins with a gentle, gradual salting with sea salt to remove moisture and enhance aromas. This is followed by a phased drying process: first in humidity-controlled cooling rooms, then in naturally ventilated drying rooms for a slow, natural maturation. Finally, the ham is covered with a protective layer of lard, flour, and pepper to prevent dehydration.
The result is a ham with a soft texture and refined flavour, with notes of hazelnut and dried fruit.
This version is pre-cut (70 g, ±10%) and vacuum packed, perfect to serve as is.
Production is artisanal and small-scale, with a maximum of only 80 pigs per week, which guarantees quality and authenticity.
