I recently prepared this very own recipe for strawberry shortcake. My dad loved it! The best part is that it is an easy recipe, tasty and quick to prepare :-) I love that!

This is what I used for ingredients:

• 1 roll of puff pastry (nice and easy!)
• 600 ml milk
• 4 tablespoons of sugar
• 2 tablespoons cornflour + a little extra milk to beat
• 4 egg yolks
• 500 g strawberries

This is what I used for herbs and spices:

• 1 (small) teaspoon of agar agar (Agar agar is a natural, vegetarian binder based on algae. It is increasingly used instead of gelatin. Agar agar is suitable for vegetarians and vegans).
• 3 large teaspoons of real vanilla sugar (Our vanilla sugar is real vanilla sugar. Namely vanilla ground with sugar. It is not an artificial flavor like you find in the supermarket. That is why our sugar looks a little brown and you see the typical black balls of the vanilla are)

This is how you proceed:

1. Preheat the oven to 180°C.

2. Unroll the puff pastry and leave it on the baking paper.

3. Place the dough in a pie tin. Press and pierce with a fork.

4. Place an extra sheet of baking paper and add blind filling (e.g. ceramic balls, rice, split peas, etc.) and bake for fifteen minutes in the preheated oven.

5. Then remove the filling and baking paper from the cake tin and let it bake for another 20 minutes until crispy and golden brown.

6. Remove from the oven and let cool.

 

In the meantime make the pudding:

7. Add the egg yolks, vanilla sugar and regular sugar to the milk and place on the heat.

8. Bring gently to the boil. You will see the milk starting to thicken.

9. Now add the beaten cornstarch. You will see that the pudding becomes a little thicker.

10. Now add the agar agar. Let it simmer for a while.

11. So. The pudding is ready. Now put them in a bowl and cover them with plastic wrap. This will prevent a skin from forming on the pudding. Once the pudding has reached room temperature, place it in the refrigerator to cool further.

12. Just before you serve the cake, take the dough. Fill the dough with the pudding (stir it first before pouring into the base).

13. Now cover the pudding with the (halved) strawberries.
