Lemon Tiramisu


I must first confess something. I did not create the recipe myself. I helped conceptualise it, but all credit goes to Anne (neighbour and loyal customer of the shop). We had gotten talking about lemon curd and what you could do with it. And then we came up with the lemon tiramisu. And believe me. Tasty, fresh and tastes like more. Those are the hallmarks of this delicious lemon tiramisu!



This is what you need in terms of ingredients:

- 250 g mascarpone
- 200 ml whipped cream
- 2 tbsp sugar
- ladyfingers
- a little water (if the lemoncello is too strong for you)

This is how to proceed :

1. Dip the ladyfingers in the lemoncello (if necessary, dilute the lemoncello with some water) and cover the bottom of a large dish with it.

2. Beat the mascarpone with the lemon curd. Whip the cream with the sugar. Spoon the cream under the mascarpone mixture. Taste briefly and if you like it more acidic you can add some extra lemon juice.

3. Cover the layer of ladyfingers with the mascarpone-whipped cream mixture. Top this layer with another layer or two of biscuits and mascarpone.

4. Garnish with lemon zest or crumbled shortbread, or a combination of the two. The lemon tiramisu is now best left to set in the fridge for a few hours. This is a dish you can definitely prepare a day in advance!
