• 1 sheet of puff pastry

• 3 eggs

• 200 ml cream

• Cherry tomatoes (enough to cover your tart)

• Feta cheese (about 200 g)

• 5-berry pepper

How do you make this flavorful tart?

  1. Preheat your oven to 180°C. Meanwhile, roll out your dough and place it in a tart pan lined with parchment paper. Prick it with a fork to prevent it from puffing up. Take an extra piece of parchment paper and place it on top of your dough. Now, we need to add some weight on top of the parchment paper. I use special ceramic marbles for this, but you can also use dried split peas or rice.

  2. Bake the dough for about 15 minutes.

  3. Meanwhile, wash the cherry tomatoes and remove the stems. Pat them dry and cut them in half.

  4. In a bowl, mix the cream and the 3 eggs together. Beat until homogeneous.

  5. After 15 minutes, remove the dough from the oven and remove the weight and parchment paper. Now, place the cherry tomatoes on top, with the cut side up. Do not place them cut side down, or the dough will become soggy. Crumble the feta cheese over them and sprinkle with Pink Himalayan salt with Mediterranean herbs, 5-berry pepper, and oregano (about a teaspoon). Pour the egg-cream mixture over them. Put the tart back in the oven for another 30 minutes.

  6. After about half an hour, the tart is ready. You can let it cool or you can serve it warm. Now, cut a delicious slice of tart and place it on your plate. Drizzle some extra virgin olive oil over the feta-tomato-oregano tart. You can also serve it with a fresh salad on the side.
