Fancy a healthy lunch? This lentil salad with black curry is for you! Also nice to take to work and make your colleagues jealous ;)

I always have a can of lentils or chickpeas at home. With this I can quickly put together a salad with some leftover vegetables from the refrigerator. Sometimes supplemented with some chicken cubes. This salad is easy to make and is ready in no time. The black curry provides a constant flavor explosion in your mouth. The black curry is ultimately a mixture of a number of roasted herbs and spices such as caraway seeds, black sesame seeds, cardamom, etc. Yes, it can be used in a hot preparation, but it can also be used cold in a salad. Or simply mixed with olive oil in which you dip some bread with the aperitif.

What do you need for the salad?

• 1 can of lentils
• 1/2 bunch of radishes
• Handful of cherry tomatoes
• half a bunch of fresh coriander
• some fresh basil leaves
• jar of Greek yogurt (not sweetened)

• fleur de sel
• black curry
• olive oil

How do you make this lentil salad?

1. Rinse the lentils thoroughly under cold water and place them in a bowl. Wash the radishes and cherry tomatoes. Cut in half or even into 4 and add to the lentils.

2. Finely chop the coriander and basil and add to the salad.

3. Now add the Greek yogurt. Season with the fleur de sel and the black curry. Also add some olive oil.

4. Mix and done. This is also a tasty salad to take to work in the summer, for example.
