Earl Grey Cookies

Earl Grey tea is a favourite ingredient in many sweet treats and cakes, including cakes, macarons and ice cream. Moreover, Earl Grey tea can serve as a flavourful addition to glazes, syrups and marinades for both meat and fish. I am happy to share my recipe for delicious Earl Grey Cookies in advance.

Earl Grey tea is a popular blend of black tea flavoured with the essential oil of bergamot. The tea originated in the early 19th century, and the name is said to be a tribute to Charles Grey, 2nd Earl Grey, who was Prime Minister of the United Kingdom from 1830 to 1834.
Earl Grey tea biscuits can be eaten with a cup of hot Earl Grey tea or with a cup of coffee or hot chocolate. The bergamot flavour in the biscuits complements the tea or coffee, and the sweetness of the biscuits offsets the slight bitterness of the tea.

I am very happy to give you my recipe for Earl Grey Tea Cookies.

Ingredients:

- 250 g all-purpose flour
- 1 teaspoon Earl Grey tea, finely chopped 
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt 
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

How to make these delicious Earl Grey biscuits

1. Preheat the oven to 180°C. Line a baking tray with baking paper.
2. In a medium bowl, whisk together the flour, Earl Grey tea, baking powder and salt.
3. In a separate large bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla and beat until well combined.
4. Slowly add the dry ingredients to the wet ingredients and mix until a dough forms.
5. Use a biscuit scoop to form the dough into 3cm balls and place on the prepared baking tray.
6. Lightly press the balls with the back of a fork.
7. Bake the biscuits for 10-12 minutes, or until lightly golden brown.
8. Let the biscuits cool for 5 minutes on the baking sheet before placing them on a wire rack to cool completely.
