Chocolate mousse with olive oil, hazelnuts and vanilla salt.

A delicious chocolate mousse with surprising ingredients. Discover the simple recipe.

I've been busy this week at work. Finally today, I got behind my pots and pans again. I had been wanting to experiment with olive oil and chocolate for some time. This time I chose the olive oil Fruité noir from Domaine de Valdition, because it has a mild flavour and even tastes a bit like candied fruit. Successful recipe, if I do say so myself :-p

This is what you need for 5 bowls:

- 200 ml cream
- 2 eggs (split)
- 50 g sugar
- 175 g dark chocolate in pieces
- 50 ml Olive oil fruité noir Domaine de Valdition
- handful of hazelnuts
- Fleur de sel
- Vanilla Bourbon

And this is how to proceed:

1. Beat the cream with the mixer until stiff and put it in the fridge for now.
2. Beat the egg yolks with the mixer until creamy and pale yellow in a separate bowl.
3. In yet another bowl, beat the egg whites until stiff and add the sugar.
4. Melt the chocolate with the olive oil in the microwave. Now mix in the yolk mixture. You will see the texture change.
5. Now spoon in the whipped cream with a wooden spatula.
6. Then fold in the egg whites.
7. Spoon the chocolate mousse into bowls and put in the fridge for at least 2 hours.
8. Toast the hazelnuts in a non-stick pan. If the shells are still on them, rub them off in a towel now. Coarsely chop the hazelnuts.
9. Make the vanilla salt. Cut the vanilla pod in half and scrape out the seeds.
10. Add fleur de sel. Put in the sticks and leave to infuse.
11. Remove the chocolate mousse from the fridge. Sprinkle with the hazelnuts and fleur de sel with vanilla.
