Breakfast muffins with surprising filling

Are you, like me, a lover of cake, jam and granola? Then it is your lucky day, because today we are making a delicious pastry with these three ingredients. A sweet breakfast muffin filled with jam and a topping of granola. Really enjoy your breakfast, snack or brunch with this treat ;)

 

After about 30 minutes, you already have delicious breakfast muffins with the most surprising filling on your plate. The best part: you can experiment with different flavours yourself. For example, I use two kinds of jam for the filling, strawberry and banana because these are my favourites. Choose your favourite flavour from our range and create your own tasty muffin. The same goes for the granola, mix and match it all you want ;)

 

TIP: A super cool idea to make these muffins together with your family. Fun guaranteed!

What do you need for +/- 15 muffins:
- 100 g butter
- 200 ml milk (vegetable or otherwise)
- 2 eggs
- 250 g self-rising flour
- 120 g (coconut blossom) sugar
- Fresh basil
- A muffin tin for the oven and paper muffin tins

 

What do you need from our shop?
- Jam of your choice: I use strawberry basil and banana jam. Definitely experiment with other flavours too :)

- Granola of your choice: I use the strawberry-quinoa and the coconut-cinnamon granola, but again, it's up to you to choose the flavour to your liking.

- Pinch of salt

- 1 tablespoon vanilla sugar

How do you make these flavourful muffins?

1. Preheat the oven to 170°C.

 

2. Melt the butter in a pan over a low heat. When it is completely melted, take the pan off the heat and pour in the milk.

3. Take a large bowl and beat the eggs in it. Then add the sugar and vanilla sugar. Mix this mixture in the bowl for a few minutes until the grainy texture disappears. You can do this with an electric whisk if necessary.

4. Take a second bowl and add the flour and a pinch of salt to this. I prefer to use our Maldon salt flakes as they are packed with natural ingredients.

5. Next, carefully pour the mixture of butter and milk into the eggs and sugar. Stir well. Then add the flour and briefly mix everything together.

6. Our batter is ready. Now take out your muffin tin and place the paper muffin tins in it. It is important that you use these moulds, otherwise the jam will spill out of your muffin and stick to the baking tray.

7. In each mould, put about 2 tablespoons of the batter followed by one tablespoon of your jam of choice. Make sure the bottom is well covered with the batter so the jam doesn't run out too much. You can fill one half of the muffin tin with the strawberry jam and the other muffins with banana. Then fill your muffin tin with another 1-2 tablespoons of the batter.

8. Your muffins are now ready for the oven. Let them bake for about 20 minutes at 170°C.

TIP: You can poke your muffin with a knife or a stick when you think they are done. Is there no more batter sticking to your knife? Then they are done! Remove the muffins from the oven and leave to cool.

9. Now finish with another small tablespoon of jam on top of your muffin and sprinkle some granola of your choice on top. I use the strawberry-quinoa granola for the strawberry muffins and the coconut-cinnamon granola for with the banana muffins. For an extra flavourful touch, you can add some fresh basil to your strawberry muffin.

 

Serve them on the table and let it taste good :D
