Before using, soak them for 15 minutes in lukewarm water mixed with milk, then rinse well. They're then ready for your favorite recipes.

Cepes omelet (serves 4–6):
Soak 50g ceps as described above. Then sauté them with finely chopped garlic and parsley in a little oil or butter. Beat 8–10 eggs, season with salt and pepper, and add to the pan. Let the omelet cook for a flavorful meal full of character.
