Morels (Morchella esculenta, conica) are one of the most refined and prized wild mushrooms in the world. Before using, morels should be soaked in lukewarm water for 15 minutes and rinsed thoroughly. They're perfect in creamy sauces, with veal, poultry, or even a festive risotto. Thanks to their powerful umami profile, they provide an intense and luxurious flavor experience.
Recipe idea – Morel cream sauce:
Soak 30g morels in warm water for 15 minutes and rinse well. Heat a knob of butter, add the shallot and the soaked morels. Deglaze with white wine, add a splash of cream, and simmer for 15 minutes. Serve with veal, poultry, or tagliatelle.
