Sol Naciente means rising sun, which suits a coffee from high in the mountains: the Sierra Nevada in Colombia, at 1,700 metres. It's 100% specialty coffee of the Castillo variety, roasted for GUST., our flavour supplier.
Taste
The bag lists three tasting notes: chocolate, caramel toffee and apricot. That promises a round, sweet espresso with a fresh fruity edge. The beans are espresso roasted, so they're at their best in a proper espresso machine, freshly ground.
How I brew it
- As an espresso: freshly ground, short and intense, no sugar.
- As a cappuccino: the chocolate note goes beautifully with frothed milk.
- As a flat white: a double shot with a thin layer of milk.
- With something sweet: next to a piece of nougat or an almond biscuit.
Keep the beans in the resealable bag, somewhere cool and dark, and grind just before brewing. They keep for at least a year after roasting.
