The counterpart to For The Pan: the same Koroneiki olive from Messinia, but picked early, in October, while the olives are still green. That gives an oil with more bite and character, made for the plate rather than the pan. Single origin, cold pressed.

Taste and use

Bold and lively, with the fresh green edge you'd expect from an early harvest. That's why you use it raw, where you can taste it. Once opened, it's at its best within two months.

How I use it

• Over a salad: with a squeeze of lemon and flaky salt, nothing more.
• With bread: a saucer of oil and fresh bread for dipping.
• Over burrata: with cherry tomatoes and basil.
• Over grilled fish: a drizzle just before serving.

Tip: keep it next to For The Pan. One for cooking, one for finishing.
