Cognac

What exactly is cognac?

Cognac is a distilled wine spirit with a minimum alcohol content of 40%, made from specific grapes, such as Ugni Blanc, grown in the region around the city of Cognac. The base wine is distilled twice in copper stills and then aged for years in French oak barrels. This aging process develops Cognac's complex aromas of fruit, spices, wood, vanilla, and honey, and gives it its characteristic golden color.

Taste, style and character

Cognac combines elegance with depth: younger varieties can have fresh, fruity notes, while older cognacs develop richer, rounder flavours with hints of dried fruit, caramel, spices and oak.

Cognacs are often classified into aging categories—such as VS, VSOP, XO—which indicate the age and complexity of the eau-de-vie in the blend.
