Guided by celebrated master distiller, Billy Walker, the team is on a 'Meikle Tour' (meaning a big chase). The aim is to carefully and precisely create an unparalleled peated single malt at their home base, the Glenallachie Distillery in Speyside.

As an independent distillery, they have complete freedom to do things their own way. Every aspect of whiskey production has been carefully considered and masterfully optimized to drive the whiskey's resulting aromatic and flavor characteristics.

Aged in superior Chinquapin virgin oak barrels, sourced from the Northern Ozark region of Missouri, USA , this single malt offers powerful notes of sweet spices and roasted nuts, which come together with the smoke of peat.

With a phenolic content of 35 PPM, the whiskey has a sweeter style of smoke character thanks to the mainland peat from St. Fergus which is used to dry the barley. After a lengthy fermentation of 160 hours, the whiskey has developed a complex character that can withstand aging in virgin oak barrels.

- On the nose: smoldering oak, burnt licorice and honey, with ginger, butterscotch and orange peel.

- On the palate: Cocoa, crème brûlée and roasted almonds, with cinnamon, anise and campfire smoke.
