Thai Pumpkin soup with red curry, coconut and roasted peanuts

Who says autumn, says pumpkin time! Many of those tasty autumn vegetables are made into soup. This time I make a delicious pumpkin soup with an exotic twist.

Autumn. So pumpkin time! Many of those tasty autumn vegetables are made into soup. And this time it is no different. I make a delicious pumpkin soup with it, but with an exotic twist. A Thai twist to be exact. By adding red curry and coconut milk you get a delicious soup that never tastes different.

What do you need?
• 1 butternut pumpkin (peeled, deseeded and diced)
• 200 ml coconut milk
• 2 cloves of garlic, chopped
• 1 (white) onion, chopped
• 2 cubes of vegetable or chicken stock + 1.5L water (can also be a little more or less depending on your own taste and the size of the pumpkin)
• fresh ginger, grated. About 1 tablespoon
• fresh, chopped coriander (you can also use flat-leaf parsley or some basil if you're not crazy about coriander)
• handful of unsalted peanuts
• Optional: some lime juice


What do you need from our store?

• dash of olive oil
• one and a half tablespoons (or two full) of red curry. Alternatively, you can also take the green curry.
salt and black pepper

This is how you proceed:

1. Fry the onion in a little olive oil until it is translucent, over not too high heat. Add the garlic and let it simmer briefly.

2. Add some extra olive oil and then the red curry. Add the pumpkin cubes and let it stew. If necessary, add a little water to avoid burning. Let it simmer gently until the pumpkin is nice and creamy.

3. Turn up the heat a little and add the stock cubes, water and coconut milk. Let it boil for a while. Then mix the soup until smooth.

4. Season to taste with salt and pepper.

5. Take a non-stick pan and roast the peanuts until light brown.

6. Serve the soup in a deep bowl or plate. Sprinkle the coriander over it and then the peanuts. If necessary, add some lime juice to freshen up the soup.
