Summer Gazpacho

In warm weather, a cold soup like gazpacho can taste great. I often just eat these as a healthy snack. If I have people, I dare to work it up a bit with some gray shrimps or a few fried scampi. Delicious as a simple starter! Also decorate your gazpacho with some basil, coriander or parsley for a spicy touch. The gapzacho that I make is based on tomatoes from a jar from our store. The advantage of this is that I no longer have to peel them and they already have a nice tomato flavor. Rustichella d'Abruzzo peeled tomatoes also contain no salt, sugar or preservatives. They are tomatoes, pure nature!


What do you need?

• half a cucumber into large pieces
• 1 green pepper (stem and seeds removed) coarsely chopped
• small onion (or half a large one), peeled
• 1 clove of garlic (peeled and stripped of the bitter core)


What do you need from our store?

• 2 jars of peeled tomatoes Rustichella d'Abruzzo (you can also replace with, for example, 1 kg of fresh tomatoes, peeled and the green core removed)
• 3 to 4 tablespoons of good olive oil (I used Bouteillan olive oil)
• 3 spoons of wine vinegar
• 1 small teaspoon of salt

How do you make this tasty gazpacho?

Making gazpacho is actually super easy! Throw all the ingredients into the blender and let it blend at full speed for about 2 minutes until you obtain a smooth soup. Place the soup in the refrigerator for a while and serve ice cold. Make it original and serve with some crushed ice. Tasty!
