Fresh Delhi Curry soup with noodles and chicken in the wok

Tasty soup with noodles and chicken. This is how you enjoy it ;)

In winter, it is good to eat an extra portion of vegetables every now and then. This recipe will definitely get you there. It is fresh and light to eat. A tasty wok with noodles, chicken and vegetables. We provide enough liquid in the dish so you can eat it as a meal soup. Delicious on a cold day.

What do you need (5 to 6 people)?
- 4 carrots
- 2 onions
- 1 red and 1 yellow pepper
- 2 small courgettes
- 1 packet of green asparagus tips
- 1 clove of garlic
- 150 to 200 g mushrooms
- 1 l water
- 2 stock cubes (chicken)
- noodles
- 1 lime
- bunch of fresh coriander

- dash of peanut oil
- 200 ml coconut milk

How to make this simple soup?

1. Dice the chicken and add 2 teaspoons of (Delhi) Curry. Mix well and set aside.

2. Put the wok on the highest heat. When the pan is very hot, add a dash of groundnut oil. Add the sliced carrots and stir-fry for a while.

3. Then add in the diced pepper. Again, wok briefly on the heat. Now add the courgette and again let it fry for a while while you keep stirring with a wooden spatula. Now add the asparagus tips and chopped garlic and let it heat through very briefly.

4. Now add the water, stock cubes and coconut milk. Bring to the boil and now add the sliced mushrooms.

5. Meanwhile, cook the noodles until tender in a large bowl of water.

6. Add 2 teaspoons of Delhi Curry to the wok and season to taste. Now add the seasoned chicken cubes and let them cook in the stock. At the end, add the juice of 1 lime. Now add the noodles and let them briefly absorb the flavor of the broth.

7. Serve the noodles, chicken and vegetables with a generous ladleful of stock in a deep plate. Sprinkle with chopped fresh coriander. Tasty!

The Delhi Curry fits perfectly in this preparation. It contains the following herbs and spices: coriander, turmeric, mint, allspice, nutmeg, onion, etc. Together with the lime juice and fresh coriander, this is a very fresh and spicy curry to lick your thumbs and fingers off.
