Saffron is a special spice obtained from the stigmas of the saffron crocus. The fine threads are known for their unique, warm, and slightly floral aroma and their beautiful golden-yellow color. Because harvesting is largely done by hand and a particularly large number of flowers are needed for a small amount of saffron, saffron is one of the most precious spices in the world.
These saffron threads from Le Comptoir Africain x Flavor Shop are delicious in classics such as paella, risotto alla Milanese, bouillabaisse, and zarzuela, but also give couscous, sauces, fish dishes, and desserts a special touch.
Usage tip:
For the best results, first let the saffron threads steep in a small amount of warm water, broth, or milk for about 10 to 15 minutes. This allows the threads time to release their color and aroma. Then, add the liquid along with the saffron to your preparation.
Recipe inspiration with saffron:
Creamy saffron risotto with Parmesan
Let a few saffron threads steep in a little warm broth. Sauté a finely chopped shallot in olive oil, add the risotto rice, and fry briefly. Add the warm broth little by little, stirring regularly. Halfway through, mix the saffron with the soaking liquid into the rice. Finish the risotto with butter and freshly grated Parmesan cheese. Delicious as a dish on its own or as an accompaniment to fish and seafood.
Mediterranean paella with saffron
Sauté chicken, shrimp, or your favorite seafood together with onion, bell pepper, and garlic. Add paella rice and pour in the broth in which you have previously steeped a few saffron threads. Let it simmer gently until the rice has absorbed the broth. Finish with lemon and fresh parsley for a colorful dish bursting with Mediterranean flavors.
Fish with creamy saffron sauce
Let a few saffron threads steep in a splash of warm cream. Sauté a finely chopped shallot, deglaze with a little white wine, and let it reduce briefly. Add the saffron cream and let the sauce gently thicken. Season to taste with pepper, salt, and optionally a little lemon juice. Serve with cod, sea bass, scallops, or shrimp.
Extra idea: saffron is also surprisingly delicious in sweet dishes. Let a few strands steep in warm milk and use this for panna cotta, rice pudding, crème brûlée, or ice cream. Combine with vanilla, citrus, pistachio, or cardamom for a refined dessert.
