The green version of Rivoltini's nougat cake from Vescovato. Everything here is about pistachio: whole nuts in the nougat and pistachio paste mixed through, with almonds and honey.

Taste

Soft and sweet, with the nutty taste of pistachio and the crunch of almond. The green colour comes from the pistachio paste and from colourings, as the label states. Gluten-free according to the label.

How I serve it

• With coffee: thin slices next to an espresso.
• With dessert: in pieces over pistachio ice cream or a panna cotta.
• With a liqueur: alongside a glass of Bottega Crema di Pistacchio.
• As a gift: for anyone who can't resist pistachio.

sugar, almonds, glucose syrup, honey, pistachios 5%, pistachio paste 4% (sugar, almonds, cashews, pistachios 4.7%, coconut oil, maize starch, emulsifier: soy lecithin, flavourings, colours: E100, E141), egg white, gelling agent (pectin, sodium alginate), safflower extract, colour: E133, wafer (potato starch, water, sunflower oil).
