Nougat doesn't have to be a small bar. This is a generous wedge of nougat cake, made by Rivoltini in Vescovato, near Cremona, where nougat (torrone) has a long tradition. This version holds three kinds of nuts.

Taste

Soft white nougat with honey, full of almonds (23%), walnuts and hazelnuts. The wafer on the outside stops it sticking. Gluten-free according to the label, and suitable for vegetarians.

How I serve it

• With coffee: cut into thin slices on a board.
• On a cheeseboard: nut nougat with a piece of aged cheese is a surprisingly good match.
• As dessert: in small cubes over vanilla ice cream.
• As a gift: a wedge of nougat like this looks festive on its own.

sugar, almonds 23%, glucose syrup, honey, walnuts 7%, hazelnuts 6%, egg white, gelling agent (pectin, sodium alginate), flavouring, wafer (potato starch, water, sunflower oil).
