The third nougat cake from Rivoltini in Vescovato, and the most Italian of the lot. The nougat holds pieces of amaretti biscuits and amaretto paste made with apricot kernels, which gives that familiar marzipan-like, slightly bitter flavour.

Taste

Soft and sweet, with honey and almonds, and every now and then a slightly crunchier piece of amaretti. Note: unlike the other two nougat cakes, this one contains milk and may contain traces of gluten.

How I serve it

• With an espresso: the classic Italian pairing.
• With a digestif: alongside a glass of amaretto or a creamy liqueur.
• In a tiramisù: crumbled between the layers for extra amaretto flavour.
• As a gift: together with a bag of good coffee beans.
