If you don't drink alcohol, you often end up at a party holding a glass of soda. Character

Tea really is the main event here: almost three quarters of what's in the bottle is tea infusion. Sencha brings freshness, jasmine the floral perfume, Darjeeling a little depth. The de-alcoholised wine gives the bubbles their backbone, so it tastes like an aperitif rather than iced tea. Fresh and delicate, with notes of ginger and white fruit.

How I serve it

Well chilled, at 10 to 12 °C, in a wine glass or flute. Not ice-cold, or the jasmine disappears.

• As an aperitif, with edamame or rice crackers.
• With sushi, sashimi or salmon tataki.
• With a light summer salad of chicken and mango.
• With a slice of lemon tart to finish.

What to do with it

This is the bottle for the pregnant friend, the designated driver, or anyone doing Dry January who still wants to join the toast. Put it next to the champagne and nobody has to explain why they're not drinking. It's a great gift too: a bottle that looks festive and that anyone can open.
