Straight from the heart of the Pajottenland – the birthplace of lambic – comes this exceptional spirit. De Cort distills carefully selected, 3-year-old lambic and subsequently ages this distillate for no less than 5 years in Pedro Ximénez sherry casks.
The result is a bold and complex beer brandy in which tradition, innovation, and terroir come together. The wild, spontaneous fermentation of lambic creates a unique aromatic profile full of fruity esters and deep, earthy notes. Aging in PX casks adds a warm, Southern layering, with hints of raisins, dried fruit, and a gentle sweetness.
This spirit is non-chill filtered and uncolored, allowing you to enjoy a pure and authentic product as it was meant to be. Moreover, this edition is extremely scarce: only 967 numbered bottles were bottled.
What makes this creation extra special? No less than 10 liters of lambic are needed for one bottle, a testament to the intensity and concentration of flavor.
