Bom Malandro White is made from an expressive blend of indigenous grape varieties: Viosinho, Gouveio, Rabigato, Arinto, and Moscatel Galego. After destemming and gently crushing the grapes, a short maceration process is performed to extract the most aromatic components. The must is then clarified and fermented in stainless steel tanks at a controlled temperature of 15-17°C.
What makes this wine special is its vinification in a reducing environment, where contact with oxygen is kept to a minimum to optimally preserve the fresh, primary aromas. The wine is aged entirely in stainless steel until bottling.
Tasting notes:
- On the nose: pineapple, mango and a hint of plum, with subtle vanilla in the background.
- On the palate: Lively and fresh, with crisp flavours of apricot and plum, supported by perfect acidity.
- Finish: balance and finesse.
Food pairing:
Bom Malandro White is delicious as an aperitif or with dishes such as grilled fish, shellfish (shrimp, mussels), cold salads with citrus vinaigrette or goat cheese
