Speculoos cookies according to grandmother's recipe

It's been a while now since I put another recipe online. I was quite busy with work. Glad I finally found the time to write out a recipe again though. I got it from my best friend. Who in turn got it from her grandmother.....

This is what you need in ingredients:

- 500 g flour
- 350 g dark brown sugar
- 250 g (hard) butter (unsalted)
- 1 teaspoon of bicarbonate of soda
- Small dash of milk

This is what you need in herbs and spices:

- Pinch of salt
- 1 teaspoon speculoos spices

And this is how you go about obtaining delicious caramelised biscuits:

1. Mix the butter and sugar by hand or food processor.

2. Then add the speculaas spices, the pinch of salt, the bicarbonate of soda and the flour. Continue kneading until a grainy mass is formed.

3. Now add a little milk so you get a smooth mass.

4. Let the dough rest for about 10 minutes. Knead again until firm.

5. Now wrap the dough in plastic foil and leave to rest in the fridge for a few hours or overnight.

6. Take out the dough. You can now stick it into little shapes, for example. I turned the dough into small balls and put them on baking paper (make sure to separate them sufficiently, as in my case they had all become one big cake...).

7. Now bake the speculoos biscuits in a preheated 150°C oven for 15-25 minutes (depending on the thickness of the biscuits).

8. Remove from the oven and leave to cool.
