Pasta Carbonara, but with some curry

Super recipe! Success always guaranteed. The nice salty combination of bacon, parmesan and curry from our spice shop is delicious.

I hadn't prepared this super recipe for years. However, I used to prepare it quite often. Sometimes with some extra chicken cubes. Success always guaranteed. The nice salty combination of bacon, parmesan and curry from our herb shop is delicious.

What do you need (4 people)?

- 500 ml cream
- 2 egg yolks
- 400 g pancetta or bacon cut into thin strips
- 60 g parmesan cheese (freshly grated)
- 1 bone of spring onions finely chopped
- 1 cup of sliced mushrooms
- 1 clove of chopped garlic
- Ground mace (this is the skirt that surrounds nutmeg. This one is finer and spicier in flavour)

How to make this delectable pasta carbonara?

1. Cook the pasta until tender in a large pan of salted water.

2. Meanwhile, fry the mushrooms in some olive oil with the garlic until tender. Also add the pancetta (you can also use smoked bacon, which is just as tasty). And fry everything until tender.

3. Meanwhile, add the egg yolks to the cream and mix together. Add the mixture to the mushrooms and bacon in the pan and let it boil for a while to thicken the sauce.

4. Season with sea salt, 5-berry pepper, mace and 1 teaspoon of mild madras curry (if you prefer it spicy(er), you can optionally take the medium curry or hot curry from our spice shop).

5. Meanwhile, drain the pasta and keep about 100 ml of the cooking liquid. Add this cooking liquid to the sauce and bring to the boil. The sauce should now have a creamy consistency. Turn down the heat and mix in the parmesan cheese.

6. Now also add the finely chopped spring onion and the pasta. Stir to combine. If necessary, season with salt and pepper.

7. Spoon the pasta onto a plate and grate some nice, fresh parmesan cheese over it. For licking your fingers and thumbs off!
