The Wilde Terf is not your average wheat beer. This special creation was created in July 2020 when Brasserie de la Senne from Brussels brewed a local wheat beer with old wheat varieties from the grain network of 3 Fonteinen, located in Beersel in Brabant. While part of the brew was immediately bottled and sold out very quickly, the other part began a quiet evolution: three years of maturation in oak lambic barrels.

In November 2023, this mature wheat base was revived by ‘lighting’ it with young lambic from 3 Fonteinen, in a carefully balanced ratio of 55% mature wheat beer and 45% lambic. The result is a unique wild blend that is lively, thirst-quenching and layered, with subtle acidity, wood influences and a refined funkiness from spontaneous fermentation.

Wilde Terf is the result of close collaboration between brewers and local farmers, with respect for Pajot landraces and fair compensation for field work.
