Fregola, also called fregula, is a traditional Sardinian pasta that resembles couscous in appearance, but is absolutely unique in taste and texture. This Fregola Sarda Tostata from Rustichella d'Abruzzo is made with high-quality wheat semolina, formed into small balls of 2 to 3 mm, which are first dried and then roasted in the oven. This creates a delicious, nutty flavor that couscous doesn't have.
