Rum from the Caribbean, spices added, all bottled in Haspengouw: Omerta comes from the Wilderen Rum Co., the rum brand of the Wilderen Distillery near Sint-Truiden. The label says it plainly: premium spirit with Caribbean rum & wild spices.

Character

This is a spiced liqueur at 35%, so softer and rounder than a straight rum. The Caribbean rum gives the base, the spices bring warmth. Ideal if you like rum but don't want it too strong.

How I serve it

• With cola: plenty of ice, Omerta and cola, with a wedge of lime.
• With ginger beer: for a spicy long drink with a kick.
• Neat on ice: a few ice cubes and a twist of orange peel.
• In the kitchen: a splash over pan-fried bananas or into a chocolate mousse.
