After the success of Geuze Pajottegem, Roel Janssens set out to create a new story – one that brings the rich history of the Pajottenland region to life. The result is Oude Geuze Pajottinga, a complex, refined gueuze that excels not only in flavor but also in symbolism.
The name 'Pajottinga' is inspired by a Germanic tribal name: Pagotta (possibly derived from 'Pajot') combined with the suffix -inga , which stands for “the people of” or “the descendants of”.
For this unique creation, Roel joined forces with the Den Herberg brewery (Buizingen) – making it the second collaboration with a family story: previously with Lambiek Fabriek (second cousin), now with Den Herberg (uncle and aunt).
The gueuze was created by The Brett House and Herberg and refermented in the bottle in Paddenbroek, using lambic brewed in oak barrels. The result? A dry, slightly tart, and sparkling gueuze with depth and elegance.
